For me the new year has brought many fruits and veggies, since I came to love juicing. I’d love to share my two favourite recipes with you for a healthy and fresh start into the day. You can check out our smoothie recipes from earlier too.
I always wanted to have a juicer and then I got lucky on Christmas Eve. Shortly after the new year came along and for once I made a resolution that I’m actually still keeping today, January 18th (just for the books): I want to eat more fruits and veggies and be more healthy (not actually a novelty) so now I enjoy shredding fruits in the mornings with my new juicer! To me it is extraordinarily yummy, healthy and otherwise I would never be able to consume so many fruits and veggies in the early morning hours, which makes it a perfect start into the day. There are many juicing advices out there, but I came up with these two recipes while experimenting with my favourite fruits and veggies. The amount of ingredients are good for two people, so you can make a tasty juice for your love or roomie as well. At the end of this post I have a delicious little surprise for you for what you could do with the leftover of the fruits.
Ingredients for the Orange Juice:
- 2 carrots
- 2 apples
- 1 orange
- 1 grapefruit
Peel and clean the carrots and apples and process them in a juicer. Usually I use my squeezer for the orange and grapefruit but you can process them in the juicer as well. Stir well and serve!
Ingredients for the Green Juice:
- 2 kiwis
- 1 large stick of celery
- 2 apples
- 1 grapefruit
Peel and clean the carrots and apples, cut the ends of the celery and process them in a juicer. As mentioned above I use the squeezer for the grapefruit but it will work with the juicer too. Stir well and serve!
You can add a dash of linseed oil to the juices as it is said to help your body to ingest all the healthy vitamins.
What to do with the left over?
Ever wondered what to do with all that is left of the fruits? I found a really easy (and since it is full of fruit it must be healthy) recipe for Carrot-Apple-Muffins as follows:
- 150g of the shredded apple (from about 2 large apples)
- 150 g of the shredded carrots (from about 2 large carrots)
- 50 g ground hazelnuts
- 250 g flour
- 80 g sugar
- 80 g brown sugar
- 100 g butter
- 2 eggs
- 3 teaspoons baking powder
- 3 teaspoons vanilla sugar
Preheat oven at 180°. Mix it well and put the dough into paper muffin liners. Bake about 25-30 minutes. Done!
